Grilled vegetables

Garlic/Onionish Bitter


  • 1 pack Castello® Traditional Fetta Cubes in Brine
  • 1 green zucchini, cut into thick slices
  • 2 yellow capsicums, cut into wide strips
  • 4 tomatoes, cut in half
  • 4 red onions, cut in half
  • 1 large clove, finely chopped
  • 1½ tbsp fresh thyme leaves, finely chopped
  • 2 tbsp olive oil
  • ¾ tsp coarse salt
  • freshly ground pepper


1. Grill the vegetables on all sides on a hot barbecue or grill. Allow five minutes for the tomatoes and about 10 minutes for the other vegetables, or until they are tender and have nice grill stripes.

2. Alternatively, roast them for about 8 minutes in the oven. Mix the garlic, thyme, oil, salt and pepper together and pour it on top of the grilled vegetables.

3. Carefully add the Castello® Traditional Fetta Cubes on top of the hot, grilled vegetables, give the mixture a gentle toss and serve.
