Omelette with Castello Marquis, mushrooms and fresh thyme

2 tbsp olive oil

1 handful of Mixed mushrooms, cut in bitesize pieces

4 eggs, whisked 

1 pack Castello Marquis 150g, cut in small wedges

1 tsp Fresh thyme, finely chopped

Omelette with Castello Marquis, mushrooms and fresh thyme

Preparation

Cook the mushrooms in some olive oil on a very hot pan for 1 minute or until tender.
Turn the heat down to medium and pour the egg mixture into the pan.
Cover the pan and leave it for 1-2 minutes or until the mixture becomes slightly firm and golden. Fold the omelette and top with mushrooms, Castello Marquis and fresh thyme.

Serve with a glass of tomato juice.
