Pearl cous-cous with Fetta & grilled zucchini salad

  • 1 pack Castello® Marinated Fetta Cubes with Garlic and Herbs
  • 1⅓ cups pearl cous-cous, cooked and cooled
  • 16 thin slices grilled zucchinis
  • ½ lemon finely grated, zest and juice
  • 1 red chilli, deseeded and chopped
  • bunch mint leaves


1. Place the cous-cous into a mixing bowl with the oil from the Fetta pack.

2. Add the grilled zucchini, lemon, chilli, and mint, season with freshly ground black pepper, and mix until combined.

3. Top with the Fetta cubes and serve.

Tips & tricks

The cous-cous is Ideally cooked in chicken or vegetable stock to add that extra flavour.
