- 100g pack Castello® Fetta in Oil with Herbs and Garlic
- 1 1/3 cups pearl cous-cous*, cooked and cooled
- 16 thin slices grilled zucchini
- 1/2 lemon, finely grated, zest and juice
- Red chilli, deseeded and chopped
- Small handful of mint leaves
PEARL COUS-COUS WITH FETTA & GRILLED ZUCCHINI SALADwith
Place the cous-cous into a mixing bowl with the oil from the fetta pack.
Add the grilled zucchini, lemon, chilli, and mint, season with freshly ground black pepper, and mix until combined.
Top with the fetta cubes and serve. *Ideally cooked in chicken or vegetable stock.
