150g Castello® Traditional Fetta Cubes in Brine, drained
1 tbsp olive oil
2 small onions (or 1 big one), finely diced
2 cloves of garlic, crushed
1 red chilli, finely chopped
2 cans chopped tomatoes - 400g each (preferably cherry tomatoes)
1 tsp cumin
0.5 tsp paprika spice (smoked if you have it)
1 tsp salt
0.5 tsp black pepper
4 eggs
1 spring onion

Castello Feta Shakshuka


1. Preheat the oven to 200°C.

2. Place an oven-proof frypan on medium heat and add the olive oil. Sauté the onions for 3-5 minutes until clear. Add the garlic, chili and all the spices and continue to cook for 1-2 minutes.

3. Stir in the chopped tomatoes and simmer for 10-15 minutes, until some of the liquid from the chopped tomatoes has evaporated.

4. Sprinkle with Castello® Traditional Fetta and crack the eggs directly over the sauce. Place the frypan in the oven on the middle rack for 5-10 minutes until the eggs are done.

5. Sprinkle with chopped spring onion and serve piping hot. Serve with some fresh crusty bread so you can soak up every last bit of the delicious sauce!
