Cheese loves apples

Sweet and savory apple-cheese combos you have to try!

It doesn’t get more classic than a cheese and apple combo and with apple season approaching soon we’ll have farmers markets teeming with apples of every kind.

So there’s no better time than now to put those fabulous flavors together and enjoy that fall is coming – luckily it brings crisp, juicy and sweet apples!

Here are some suggestions for accompaniments to get your started!


Apple chipsapple chips recipe

Apple chips are a great alternative to chips, but also work perfectly in a salad or as part of a cheese board.

4 servings

3 apples, e.g. Granny Smith
1 dl apple cider vinegar
50 g butter - melted
3/4 tsp fine salt

Wash and dry the apples. Remove the core, and cut the apples in 1 mm thin slices. As you slice the apple, add the slices to the apple cider vinegar, so they don’t turn brown. Brush the apple slices on both sides with the melted butter and spread them out, without overlap on 3 baking trays with greaseproof paper. Place the trays in the top, middle and bottom of the oven.

When you take the apple chips out of the oven, they will still be soft. Let them cool off on a griddle, and they will become crisp. Sprinkle the crisp apple chips with salt and serve quickly afterwards. They will become soft if left too long. 

The apple chips can be eaten as snacks, but are also delicious in salads or as trimmings on a starter course or lunch.   

Time in oven: About 25 min. at 150° Celsius – hot air.


Spicy Apple Jellyspicy apple jelly recipe 

 A sweet and fresh dessert with crisp and juicy apple!

As strong cheeses mellow a bit when paired with sweeter fruit and mild cheeses become more lively, this jelly pairs well with both white and blue mold cheese.

4 servings 

100 g Apple Jelly
2 tbsp Light raisins
¼ tsp ground ginger

Serve with a Castello® Double Cream Brie or Mild Blue on crisp crackers with apple wedges.

Stir jelly, raisins and ginger together. Cover the spicy jelly and put it in the refrigerator for at least 15 minutes. Season to taste.


Marinated Applesmarinated apples recipe

2 servings

1 red-skinned apple, cut into very thin wedges (approx. 175 g)
3 tbsp (45 mL) liquid honey
2 tsp (10 mL) white balsamic vinegar
3 tbsp (45 mL) raisins

Fold the apple wedges into the vinegar when cutting them out. Add honey and raisins and marinate the apples for approx. 15 minutes.

Remove apples and raisins from the marinade. Serve with white mold cheese wedges and crisp bread of your choice.
