Black Pepper Chicken Wings with Herbed Blue Dip

Ingredients for 4-6 servings

16-20 chicken wings 
1/2 cup (125 mL) Tre Stelle® Grana Padano Parmesan Cheese, grated 
2 tbsp (30 mL) all purpose flour 
1 tbsp (15 mL) ground black pepper
1 tsp (5 mL) salt 
1/2 cup (125 mL) butter, melted 

Herbed Blue Cheese Dip 
1 cup (250 mL) sour cream 
1/2 cup (125 mL) plain yogurt 
1 tub (142 g) Castello® Crumbled Blue Cheese 
1 clove garlic, minced 
1/2 cup (125 mL) mixed fresh herbs, finely chopped 
(a good combination is rosemary, basil, chives & oregano) 

Black Pepper Chicken Wings with Herbed Blue Dip


In a large saucepan filled with salted water add wings and simmer for 10 minutes, remove from heat and drain. Preheat oven to 400ºF (200ºC). 

In a medium dish combine the Grana Padano Parmesan Cheese, flour, black pepper and salt, set aside. Dip each chicken wing into melted butter and roll in Parmesan mixture. Arrange on a foil lined baking sheet. 

Bake for 30 minutes, turning once between baking. 

Alternatively, fry in a shallow skillet with oil. 

Herbed Blue Cheese Dip: Combine all ingredients and refrigerate until ready to serve.
