Blackberry and Apple Crumble with Blue Cheese

Ingredients for 6 servings

3 cooking apples - approx. 150g in weight
100-150g (½ cup) blackberries
1 x 175g pack Castello® Noble Blue Cheese, crumbled
200g caster sugar
170g (½ cup) plain flour
75g (5 tbsp) butter
(1-2 tbsp) Demerara sugar (raw cane sugar), optional

Blackberry and Apple Crumble with Blue Cheese


Preheat oven to 180º/ 350ºF.

Peel, halve and slice the apples thickly and place in the base of an ovenproof dish with the blackberries, 100g of the caster sugar and half of the crumbled Blue Cheese.

Rub the butter into the flour until it resembles coarse breadcrumbs, stir in the remaining caster sugar and crumbled Blue Cheese. Scatter the crumble mixture over the fruit in an even layer and if desired sprinkle with a light coating of Demerara sugar.

Bake for approx. 25 minutes until top is golden brown and fruit begins to bubble up through the crumble.

Serve warm with vanilla ice cream if desired.
