Blue Pear Pork Tenderloin

Ingredients for 2-4 servings

1 large pork tenderloin 
3 tbsp (45 mL) butter, melted 
1 shallot, finely chopped 
1 tbsp (15 mL) fresh thyme, finely chopped 
1 tsp (5 mL) black pepper 
1/4 tsp (1 mL) salt 
1 tbsp (15 mL) Tre Stelle® Parmesan Cheese, grated 
1 cup (250 mL) fresh bread crumbs 
1 package (125 g) Castello® Traditional Blue Cheese 

Blue Pear Pork Tenderloin


Preheat oven to 375 F (190 C) 

Melt butter in a small skillet, add shallots, salt and pepper; cook until soft and remove from heat. In a small bowl combine bread crumbs, shallot mixture, thyme, Parmesan and Blue Cheeses; set aside. Cut tenderloin lengthwise so it opens like a book being careful not to cut through. Place stuffing into slit, close and tie with kitchen twine at 1 1/2” (4 cm) intervals. Place on a roasting pan, cover with foil and bake for 30 minutes. Remove foil and bake for an additional 20 minutes or until cooked through. Remove from oven and let sit for 10 minutes, remove twine, slice and serve. Best served warm.
