Blueberry Syrup

30min Ingredients for 4 servings

200g blueberries

4 sprigs lemon thyme

3 cups water

100g sugar

Blueberry Syrup


Boil water, lemon thyme and blueberries for 10 minutes at medium heat without lid. Add sugar.

Boil until you get big bubbles, this means that the syrup has thickened. But be also aware, as this passes quickly and it may suddenly boil dry. So keep an eye on it.

Add the syrup to a glass and serve with Castello Tickler Extra Mature Cheddar.

This syrup would be exceptional served with pancakes.  Also, this recipe will be just as delicious with most in-season berries.
