Bubble ‘N’ Squeak with Bacon and Blue

Ingredients for 2 servings

1 medium red onion – peeled and sliced
50 g butter
80 g Pancetta (diced) or chopped streaky bacon
200 g Cooked potatoes – skins on and cut into smallish chunks
Half a small green cabbage – shredded
125 g Castello Extra Creamy Blue Cheese
Pepper to season
Chopped parsley to serve

Heat butter in a heavy bottomed large skillet or frying pan, add onion and cook for 5 - 7 mins, then add the pancetta and continue cooking for further 5 mins stirring all the while.

Add cabbage and potatoes and cook stirring every now and then for 8 - 10 mins, finally scatter with the cheese and allow it to melt into mix. Tip, at this point you can place a lid or piece of foil over the pan to allow the cheese to start to melt.

Season to taste and serve scattered with chopped parsley.
