Castello® Blue Cheese Chop Salad

Ingredients for 2-4 servings

Lime Vinaigrette

1/2 tsp 2 mL granulated sugar
1/2 tsp 2 mL salt
pinch ground coriander
3 tbsp 45 mL olive oil
1 tbsp 15 mL freshly squeezed lime juice
1 tbsp 15 mL fresh cilantro, finely chopped

2 boneless, skinless chicken breasts, cooked
and diced into 1" cubes
6 cups Romaine lettuce, chopped
6 slices bacon, cooked and crumbled
1 pkg 125 g Castello® Traditional Danish Blue, crumbled
2 avocados, pitted and diced
1 cup 250 mL canned black beans, rinsed and drained
1 cup 250 mL fresh corn, grilled and removed from the cob
or canned corn, drained
6 cherry tomatoes, cut in halves
1/2 small red onion, peeled and thinly sliced

Chop Salad



Whisk all ingredients together until combined; set aside until ready to use.

Assemble the salad: In a large bowl add the diced chicken, lettuce, bacon, Blue Cheese, avocados, black beans, corn, tomatoes and red onion; toss and drizzle with garlic vinaigrette; toss again. Serve immediately.
