Castello® Burger Blue with Greens and Carrot Fries

Ingredients for 4 servings

Burger Ingredients:

4 slices Castello Burger Blue Slice Cheese

1 ½ pounds (700 g) Lean Ground Beef

Salt and pepper to taste

1 tbsp  (15 mL)Butter

4 fresh burger buns

¼ Cup  (60 mL) Chili Mayonnaise

Frisee greens

Fresh pea sprouts

China Rose Sprouts

Pickled Red Onions:

100 mL Vinegar

100 mL Sugar

 50 mL Water

1 red onion cut into very thin slices

Carrot Fries:

3 carrots, peeled

1 liter of frying oil

Sea salt

Castello Burger Blue with Greens and Carrot Fries


Boil vinegar, sugar and water in a saucepan.  Add the red onion slices and let the brine cool in the refrigerator.

Peel and wash carrots.  With a peeler continue to peel carrots into long thin strips. Heat oil in a saucepan. Test the temperature with a small piece of bread – bread should be golden.  Pat carrots dry and gently place in the hot frying oil for about 3 minutes.  Remove them with a slotted spoon and let them drain on paper towels.  Sprinkle with sea salt.

Stir the lean ground beef with salt and pepper.  Form the meat into 4 equal burgers (about 10 cm in diameter). Melt the butter in a saute pan and cook until golden. Fry the burgers for about 2 minutes per side for rare (adjust cooking time according to preferred doneness). Cover burgers in saute pan with a lid remove from heat and let rest for 5 minutes.  Cut burger buns in half and warm up the buns in the oven.  Better each bun bottom with Chili Mayonnaise, add frisee greens and sprouts. Top with a burger patty, lay on a Burger Blue Cheese slice on top of each burger and add the pickled onions on top.  Add the top of the bun and serve with carrot fries.
