Cheddar pancakes

30min Ingredients for 2 servings

4 eggs

¾ cup flour

7 ounces grated Castello® Tickler Extra Mature Cheddar

100 ml milk

Salt and pepper

2 tablespoons finely chopped chives

butter for frying

Cheddar pancakes


Whip eggs and milk with salt and pepper. Mix in the flour and whip until there are no more lumps. Add the grated cheddar and chives.

Fry in a hot pan for about 2 minutes on each side.

Top the cheese pancakes with Parma ham, lettuce, tomatoes, Castello® Extra Creamy Danish Blue and watercress.
