Mussels with Blue Crumb Crusts

Ingredients for 4 servings

50 Mussels, washed well, cleaned of all grit and bearded bits, and any open ones discarded if they do not close with a sharp tap 
1 onion, sliced
125 mL (½ cup) white wine
125 mL (½ cup) water
1 bunch parsley
50 mL (3½ tbsp) fresh breadcrumbs
100 g Castello® Traditional Blue Cheese, crumbled
Juice and rind of 1 lemon

Mussels with Blue Crumb Crusts


Place wine, water and a few sprigs of the parsley into a large pan, bring to a boil then tip in the mussels, cover and cook for approx. 5 minutes until shells open.

Meanwhile combine the breadcrumbs with the crumbled Blue Cheese, juice and rind of the lemon and a good bunch of finely chopped parsley.

Once mussels are cooked, break off one half of each of the shells and discard, then press a little of the crumb and Blue Cheese mixture over the mussels in the remaining shell.

Once you have filled all mussels, heat grill to high and quickly cook the mussels under the hot grill until just golden brown. Serve with wedges of lemon as a starter or light lunch.
