200g Castello® Tickler Extra Mature Cheddar

200g raspberries
1-2 organic lime(s)
40ml rum
1.5 tablespoons sugar

Raspberry Daiquiri Jam


Mix the raspberries with sugar and let them sit for 15 minutes. Bring the mixture to boil and simmer for about 7-10 minutes without a lid. Season with both juice and zest of the lime and rum. Boil the alcohol away.


Pour the mixture in scalded jars and secure the lid.
