Roast Chicken with Blue Cheese, Lemon and Thyme

Ingredients for 6-8 servings

1 medium to large chicken 
2 lemons
Half pack Castello® Blue Cheese

Few sprigs fresh thyme
Black pepper

Roast Chicken with Blue Cheese, Lemon and Thyme


Preheat oven to 180ºC/375ºF

Combine the cheese with the grated rind of one lemon, the thyme leaves and season with black pepper.

Gently work your fingers under the skin from the neck cavity spreading them out to release the skin from the breast meat but keeping skin intact. Then push the cheese mixture in between the skin and breast in an even layer.

Place in a roasting tin. Cut the lemons in half, place two halves in the cavity of the chicken, and squeeze and rub the other two halves over the chicken.

Roast as directed, allowing 20 minutes per pound plus 20 minutes over. Serve with roasted baby new potatoes and roasted onions, or other vegetables of your choice.
