Roasties with Blue Cheese and Chives

Ingredients for 4-6 servings

500g roast potatoes
1 x 125g pack Castello® Extra Creamy Danish Blue cheese
Small handful of fresh chives
Sea salt

Roasties with Blue Cheese and Chives


Roast the potatoes in the normal way, when just ready to serve, remove tray from oven and drain off any fat from base of pan.

With a fork press each potato so that it just breaks open, scatter with the cheese broken into medium sized crumbles, the snipped chives and a very little sea salt. 

Return to the oven for a further 4-5 minutes until the cheese is just melting, serve hot.
