Spaghetti Bolognaise with Gorgonzola

Ingredients for 4 servings

1 onion – peeled and chopped
1 clove garlic – finely chopped
1-2 tbsp oil
2 sticks celery – chopped
2-3 rashers of bacon – de-rinded and diced
450 g minced beef
2-3 tbsp tomato purée plain or sun dried.
500 mL beef stock.
300 g spaghetti
1 pack Castello® Gorgonzola


Spaghetti Bolognaise with Gorgonzola


Heat oil in a heavy bottomed pan and gently fry the onions, garlic, bacon and celery until just soft.

Add the beef and brown quickly, then stir in the tomato puree and sufficient stock to give a good consistency. Bring to boil then simmer for 30 minutes, stirring occasionally and adding more stock if necessary.

When meat sauce is nearly cooked, boil up a pan of water and cook pasta as directed on pack.

To serve, drain pasta and return to the pan with approx. half the cheese broken into crumbles. Stir gently through pasta. Serve pasta topped with meat sauce and remaining cheese crumbled over top.
