Spicy pumpkin confiture

1h Ingredients for 4 servings

500g pumpkin cut into small cubes
2 lemons
150ml water
200g sugar
1 vanilla pod 
2 cloves
1 stick of cinnamon
4 cardamom pods

With Halloween comes pumpkins! And lot’s of them. And while they do make an excellent filling in the classic pumpkin pie there are lots of other great ways to get the most out of this delicious fall beauty.

And let’s stay in the sweet corner this Halloween. Here’s a recipe for a spicy pumpkin confiture, where the classic pumpkin pie spices meet the sourness from freshly squeezed lemons. It’s sweet, it’s sticky and it’s just the perfect match for the rich, salty and slightly crystallized Castello Tickler Extra Mature Cheddar.


Cook water, sugar, lemon juice into a light syrup. Add the small cubes of pumpkin and spices including vanilla pod (scraped free of the grains).

Let the mixture simmer until the pumpkin starts to become transparent. It takes about 20-30 minutes depending on the size of the cubes.

Pour the mixture into a scalded glass and enjoy it with crackers and extra matured cheddar.

TIP: If you want a more classic jam, boil the pumpkin tender with lemon and water, when the pumpkins are tender, add the sugar. When sugar has been added, it must cook for about 10 minutes.

If you want to add spices, add them from the beginning, so the jam can get the most flavor!
