Taquitos with Castello® Tickler Extra Mature Cheddar and salsa

  • 10-12 corn tortillas
  • 200 g Castello® Tickler Extra Mature Cheddar
  • 1 red onion
  • 2 tbsp. chopped coriander
  • Chipotle hot sauce
  • Oil 
Taquitos with Castello® Tickler Extra Mature Cheddar and salsa

Preparation

Cut the cheddar into sticks to fit the size of the tortillas. Slice the red onion thinly and mix the onion slices with coriander. Place a stick of cheddar on each tortilla with onion and coriander.Add a bit of hot sauce if you would like your taquitos extra spicy. Fold the tortillas as tight as possible and place on a roasting pan – side by side.

Once the tortillas are wrapped, brush with oil, and bake for 12 minutes (200°C) until crisp. Serve with fresh coriander, jalapenos and taco sauce.
