Brown Butter Green Beans with Blue Cheese

Ingredients for 2-3 servings

1 pound green beans, washed and trimmed

1/3 cup pine nuts, roasted

2 teaspoons fresh lemon juice

2 tablespoons salted butter

2 tablespoons dried cranberries

2 oz. Castello Traditional Danish Blue Cheese, crumbled

Salt & black pepper, to taste

Brown Butter Green Beans with Blue Cheese


  1. Wash and trim the green beans. Pat dry and set aside.
  2. In a pan bring water to a boil. Add green beans and cook for 3-4 minutes. Remove from water and drain. The beans should still be crisp, not soft.
  3. In a pan, add unsalted butter. Let it melt and swirl around until it turns amber in color. This will take around 5-6 minutes.
  4. Add the cooked beans. Sauté for a minute until beans are well coated with butter.
  5. Mix in cranberries, roasted pine nuts, salt and pepper.
  6. Transfer to serving plate and sprinkle crumbled blue cheese on top. Serve immediately.
