Yoghurt with Elderflower Chia Seeds, Strawberries & Cucumber

So healthy, but so delicious – our recipe for Elderflower chia is a breakfast fit for a champion. The wonderful and unique flavours of elderflower blend perfectly with vanilla and strawberries, while the great textures come from yoghurt and chia seeds. Why not start your day in this great way?

ingredients

Elderflower chia

  • 2 tbsp concentrated elderflower cordial
  • 2 tbsp water
  • 1 tbsp chia seeds
  • ⅛ tsp vanilla powder
  • 4⅖ ounces cucumbers in cubes
  • 4⅖ ounces strawberries in cubes
  • 1⅔ cups plain 0.5% organic yoghurt
  • 0.9 ounce almonds in chunks

preparation

1. For the elderflower chia: Combine the juice, water and chia seeds and let stand for about 15 min.

2. Gently toss the cucumber and strawberries with the elderflower chia.

3. Place some yogurt in bowls and top with the strawberries and cucumbers.

4. Sprinkle with almonds and serve.
