Skyr with Orange-Passion Fruit Topping

Toasted five-grain flakes

  • 3½ ounces rye flakes
  • 3 tbsp sugar
  • 0.9 ounce roughly chopped unsalted pistachios
  • 1 orange in fillets
  • 1 passion fruit – seeds
  • 1⅔ cups skyr


1. For the toasted five-grain flakes: Sprinkle the rye flakes, sugar and pistachios on a dry frying pan and toast the mixture over high heat for about 2 min.

2. Reduce to medium heat and continue toasting for about 5 more minutes, stirring occasionally. Set the flakes aside to cool.

3. Combine the orange fillets and passion fruit. Place some Skyr in bowls and top with the fruit and flakes. Serve immediately.
