Peach Cobbler with Double Crème Blue

Ingredients for 8 servings

6 cups peaches, peeled and sliced
3/4 cup granulated sugar
1/4 cup water
Zest of 1 lemon
1/2 cup unsalted butter
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1/2 cup dark brown sugar
1/2 cup whole milk
2 oz. Castello Double Crème Blue, sliced

Peach Cobbler with Double Crème Blue


Preheat the oven to 375°F.

Add the butter to a 13-inch x 9-inch pan and place it in the oven to melt. 

In the meantime, add the peaches, sugar and water to a pot over medium heat. Bring to a gentle boil and cook, stirring occasionally, for 10 to 12 minutes.

Remove mixture from the heat. Stir in the lemon zest, then set aside.

In a mixing bowl, whisk together the flour, baking powder, salt, sugars and whole milk. Whisk until just combined.

Remove the pan with butter from the oven. Pour the batter over the melted butter. Do not stir.

Sprinkle the sliced Double Crème Blue Cheese over the batter. Then, pour the peaches over the top.

Bake, uncovered, for 40 to 45 minutes. The cobbler should be golden brown, crisp and bubbly.

Remove from the oven and let set for 15 minutes before serving.
