1 cake
Sweet Citrusy

ingredients

  • 7.9 ounces butter
  • 9⅔ ounces brown sugar
  • 3 eggs
  • 12¼ ounces plain flour
  • 1½ tbsp vanilla sugar
  • 1½ tbsp baking powder
  • ¼ tsp coarse salt
  • 3½ ounces finely grated beetroots
  • 1 cup beetroot juice
  • 2 tsp apple cider vinegar

Lime frosting

  • 7 ounces plain cream cheese 25%
  • 3½ ounces icing sugar
  • 2 tsp lime zest
  • 2 tbsp freshly squeezed lime juice
  • 1¼ cups sour cream 30%

Garnish

  • blueberry dust

preparation

1. Beat the butter with the sugar until light and fluffy. Add the eggs one at a time, beating between each egg.

2. Combine the flour, vanilla sugar, baking powder and salt. Combine the beets, beet juice and apple cider vinegar, then carefully fold the flour mixture and the beet mixture alternately into the egg mixture.

3. Pour the batter into a greased springform (approx. 9 inches in diameter). Bake in the middle of the oven for approx. 1 hour at 350°F (conventional oven), then cool on a rack. Carefully slice the cooled cake lengthwise into 2 layers.

4. Lime frosting: Combine the cream cheese, powdered sugar, lime zest and juice. Beat the whipping cream until stiff, then fold into the cream cheese mixture.

5. Place one cake layer on a serving dish. Spread ⅓ of the frosting on top. Place the second layer on top. Spread the rest of the frosting all over the cake.

6. Start on top, then spread it down sides, creating a smooth surface. To get the frosting completely smooth, just dip the palette knife in warm water and dry it off.

7. Draw one large and one small heart on two pieces of paper and cut them out. Use the hollow heart stencils to sprinkle heart shapes on the frosted cake using blueberry dust.

Tips & tricks

You can substitute beet pulp from a juicer for the grated beets. The pulp is what is leftover after pressing juice.
