Chicken Sliders with Chili dip and Tomato-salsa

  • 500g ground chicken
  • 1 tsp salt
  • 1 tsp sriracha sauce
  • 2 egg yolks
  • 2 tbsp parsley
  • 100ml heavy cream

Chilli dip:

  • 2 green chillies
  • 1 shallot
  • 2 tbsp gari (pickled ginger)
  • 100ml mayonnaise
  • 1 tsp sriracha sauce
  • 2 tbsp chilli sauce
  • Pressed juice of 1 lime

Tomato salsa:

  • 4 tomatoes
  • 1 red onion
  • 3 tbsp chopped coriander
  • 50ml olive oil
  • A pinch of salt
  • A dash of pepper
  • 4 slices of Castello┬« Burger Cheddar
  • ┬Ż tsp chilli flakes
  • Lettuce leaves

Chicken Sliders with Chili dip and Tomato-salsa


Combine the ground chicken with the salt. Add the remaining ingredients and mix into a paste. Form into 16 mini patties. Deseed the chilli and peel the onion. Finely chop the chilli, onion and ginger. Combine with the mayonnaise and the remaining ingredients.  Chop the tomatoes into small cubes. Peel and finely chop the onion. Combine with the tomatoes, coriander, olive oil, salt and pepper. Cut the cheese into 16 pieces. Barbecue the burgers for approx. 1 min. Turn them over and cover each with a piece of cheese and let melt. Sprinkle with chilli flakes. Toast the buns then top with chilli mayo, meat, lettuce and tomato salsa.
