Turn the hob down to a medium heat and stir in grated mature cheddar with the corn-starch, ensuring that you are continually stirring the mixture until the cheese has melted and the sauce is smooth. Drain the macaroni and add to the cheese sauce. Carefully stir for 3-4 minutes until the macaroni is covered with sauce. Season with nutmeg and serve straight away.

Traditional cheese sauce is not meant for longer cooking, and risk clotting and separating after prolonged exposure to heat. In order to prevent the sauce from curdling, and to ensure that you get that silky-smooth texture of the cream in your crockpot, evaporated milk gives the best results. For taste and depth, depending on what you prefer, our Castello® Mature Cheddar and Castello® Aged Havarti act as high points in any macaroni and cheese, either on their own or together. The thick and crumbly texture from having been aged easily melts and mixes and promotes that characteristic and universally loved macaroni and cheese flavour, with a satisfyingly sharp finish.
