Duck rolls with orange dressing

Ingredients for 12 Appetizers

  • 1 orange (preferably organic)
  • Salt
  • Pepper
  • Sugar
  • 4 tbsp olive oil
  • 120 g Castello Pineapple Cream Cheese
  • 12 stalks coriander
  • 12 slices of smoked duck breast (3-4 mm thick)
Duck rolls with orange dressing


Wash the orange in hot water and dry thoroughly. Carefully shave off half of the orange zest. Cut the orange in half, and squeeze the juice of one half. Season the juice with a little salt, pepper and sugar. Add oil and mix. Mash cheese with a fork and stir smooth. Wash coriander, pat dry, pluck leaves from the stems. Place some leaves aside for garnish. Finely chop the remaining coriander. Spread cheese on the duck breast slices and spread. Sprinkle with cilantro, roll up. Orange dressing spread over 12 appetizer spoon, put into duck rolls, garnish with orange peel and coriander.
