Pea purée

  • 2 shallots, chopped
  • 50 ml water
  • 300 g fresh peas
  • 50 ml crème fraiche 18%
  • Salt and ground pepper
Pea purée


Bring the water and onions to a boil in a saucepan. Add the peas and simmer for approx. 3 minutes until tender. Blend using a handheld blender until smooth, then add the crème fraiche. Season to taste with salt and pepper.
