Gingerbread with blue cheese, mandarins and honey

  • 250 g Butter
  • 400 g Syrup
  • 300 g Brown Sugar
  • 1 kg Flour
  • 2,5 ts. Pepper
  • 2 tsp. Ginger powder
  • 2 tsp. Cardamom powder
  • 5 tsp. Cinnamon
  • 4 tsp. Soda
  • 2 Eggs

Large portion: approx. 100 cookies

Gingerbread with blue cheese, mandarins and honey


1. Melt butter, brown sugar and syrup in a pan over medium heat
2. Melt the ingredients and add the spices. Stir thoroughly and let the mass cool.
3. Pour the flour into a large bowl
4. Add eggs to the sugar/butter mass and knead it all together with the flour.
5. Let it rest covered in the refrigerator for about 1.5-2 hours.
6. The dough is now ready to be rolled out to about half a centimeter in thickness.
7. Cut them out in the desired shape and bake at 200 ° for about 5-6 min. When they turn golden, they are done.
8. Allow the cookies to cool on a rack until they are hard and crunchy

Serve the cookies with Castello Danablu, some mandarin slices and a bit of honey.
