Salmon in Filo with Leeks and Blue Cheese

1 medium leek
75 g butter
2 salmon fillets
2 sheets filo pastry (approx.11x16” or if using smaller sized ones, use 4 sheets)
1 pack Castello® Blue Cheese

Dill for garnish if desired

Salmon in Filo with Leeks and Blue Cheese


Cut leek in quarters lengthways, wash well and drain, then cut into lengths approx. 6cm long. Melt 25g butter in a pan and gently sauté leeks until just al denté, remove from pan and drain on kitchen paper.

Preheat oven to 180ºC/375ºF

Melt remaining butter in pan, open out filo and if using large sheets cut each in half across length and lightly brush each half with melted butter.

Lay one half of the pastry on a lined baking sheet, scatter with a little crumbled cheese and then top with second half sheet but lay it with corners slightly offset.

Place some of the leeks in middle of pastry, top with some crumbled cheese and then one salmon fillet.

 Bring up pastry around sides of salmon to form a 'collar' but not entirely cover top of fish. Repeat with remaining ingredients. Brush both again very lightly with the butter, and scatter a little further cheese over salmon, bake for 15 – 18 minutes until pastry golden brown and salmon cooked.
