Wasabi Crusted Salmon with Blue Cheese Dressing

4 servings

2 tbsp (25 mL) rice vinegar 
1 tbsp (15 mL) canola oil 
1 tbsp (15 mL) sesame oil 
1 tsp (5 mL) wasabi powder 
1 garlic clove, minced 
1 - 12 oz fresh salmon filet 
2 tbsp (25 mL) wasabi powder* 
salt and pepper to taste 
1 tbsp (15 mL) butter 
1/4 cup (50 mL) Castello┬« Blue Cheese, crumbled 
6 cups (1.5 L) mixed salad greens, lightly packed 

Wasabi Crusted Salmon with Blue Cheese Dressing


Whisk together vinegar, oils, wasabi powder and garlic; set aside. 
Press wasabi powder, salt and pepper onto salmon filet; set aside. Meanwhile, melt butter 
in a medium skillet, add salmon filet and cook approximately 3-4 minutes per side or until centre is cooked. 

Divide salad greens onto 4 serving plates. Cut salmon filet into quarters and place on top 
of salad greens. Drizzle dressing liberally over each and top with generous amounts of 
crumbled Blue cheese. 

*wasabi powder can be found at traditional Asian markets or at some select supermarkets.
