Cheddar Steak Burger with Caramelized Onions and Portobello Mushrooms

Ingredients for 4 servings

BEER-CARAMELIZED ONIONS

2 tablespoons butter

2 onions, thinly sliced

1/2 tablespoon sugar

1/3 cup beer, such as brown ale

Salt and ground pepper

 

BURGER

4 steaks, about 1/4 pound each

4 slices Castello Matured Cheddar

4 Portobello mushrooms, sliced

Olive oil, for grilling

4 burger buns

1/4 cup arugula, rinsed

4 tablespoons mayonnaise   

               

Fries or potato wedges

Chili flakes for sprinkling

Cheddar Steak Burger with Caramelized Onions and Portobello Mushrooms

Preparation

Melt the butter in a pan over medium heat. Add the sugar and onions and sauté, stirring constantly, for about 15 minutes, or until the onions are soft. Pour beer over the onions a little a time, letting it boil off completely before adding more. Keep going until the onions are caramelized. Season to taste with salt and pepper.

Heat up the grill and cook the steaks for approximately 2 minutes on each side. Top each steak with cheese, season with salt and pepper and set aside to rest. Brush the mushrooms with oil and grill them on the hot grill.

Slice the buns and warm or toast them. Spread the buns with mayonnaise and top with arugula, steak, mushrooms and onions. Serve with chili-fries and extra mayonnaise.
