Coarse Salad with Cheddar

Ingredients for 4 servings

1/4 small red cabbage

1/2 fennel bulb

1 red onion

2 tomatoes

8 radishes

4 1/2 ounces Castello Extra Mature Cheddar

Mixed herbs, like red sorrel, basil, oregano and parsley



6 tablespoons olive oil

3 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

2 tablespoons capers

Coarse Salad with Cheddar


It’s time for al fresco dining, soaking up the sun and lovely picnics. Here is a delicious dish that is easy to pack along with a bottle of wine and high spirits. The goal is to make practical dishes that require minimal preparation when you arrive.

Cut the red cabbage, red onion and fennel into thin strips with a mandolin and distribute among the containers. Top with both radishes and tomatoes. Close the containers.

Pick the herbs and pack in a plastic container. Combine all of the ingredients for the vinaigrette and pour into a jar. Cut the cheese into cubes and pack them.

When it’s time, just open all the containers and assemble the salad. Add the cheese and herbs last, then sprinkle with a little vinaigrette dressing.
