- 1/2 cup elbow macaroni.
- 2 tablespoons butter
- 1 tablespoon flour
- 1/2 cup white wine (or chicken stock or milk)
- 1 1/4 cups whole milk
- 2 teaspoons mustard
- 1 teaspoon smoked paprika
- 1 package Castello Burger Blue
- 1 package Castello Aged Havarti, grated
- 6 ounces bacon
Mac ‘N Burger Blue Cheese with Bacon
Cook the elbow macaroni per the box instructions. Roughly dice 1/2 of the bacon and finely dice the remainder, then cook on a hot pan until crisp.
In a pan, melt butter and whisk in flour. Add white wine (or substitute chicken stock) and whole milk. Let simmer until it reaches a thick and creamy texture. Add smoked paprika and mustard.
Remove the sauce from the heat and stir in grated Castello Aged Havarti, 1/2 of the crisp bacon and 3 crumbled pieces of Castello Burger Blue. Stir in the cooked elbow macaroni and put in a greased pan. Top with the remaining bacon and Castello Burger Blue slices.
Bake in the oven at 400°F for about 20 minutes, or until the cheese takes on a bit of color.
This mouth-watering side dish is easy to prepare in advance and reheat, if you are inviting a large number of guests.
