Michael Symon’s Blue Cheese and Avocado Turkey Burger

Ingredients for 4 servings

Olive oil

Kosher salt and freshly ground black pepper

1 1/2 pounds ground turkey

2 tablespoons water

2 tablespoons Dijon mustard, plus more for serving

1/2 cup finely sliced scallions

1/4 cup breadcrumbs

4 slices Castello® Burger Blue

1 ripe avocado, peeled and sliced

Alfalfa sprouts, to serve

4 soft brioche style buns, toasted

Michael Symon’s Blue Cheese and Avocado Turkey Burger


Preheat a griddle pan to medium-high heat.

In a mixing bowl, gently combine the turkey, water, scallions, 2 tablespoons Dijon mustard and the breadcrumbs. Divide the turkey in to 4 equal patties, and then season with salt and freshly cracked pepper on both sides. Drizzle the pan with olive oil, and then add the burgers. Cook until golden brown on both sides, 5 minutes per side. In the last minute of cooking, top each burger with a slice of blue cheese and let melt. Cover if needed.

To serve: Spread the toasted bun with Dijon mustard and add the burger. Top with sliced avocado and alfalfa sprouts.
