Burger Blue Sliders with red onion-strawberry relish

A simple burger with a sophisticated topping that goes nicely with the salty and creamy Burger Blue Cheese. The red onion relish is great on more than just burgers. Try it on white pizza with blue cheese or as a condiment with cheese and crackers.

Red onion relish:

  •  45g butter, unsalted
  •  3 red onions, halved and sliced
  •  12 strawberries, chopped
  •  80g sugar
  •  20g raspberry or red wine vinegar
  •  50 ml red wine
  •  Salt and pepper to taste

 Sliders:

  •  750g ground meat
  •  1 tsp salt
  •  1/2 tsp pepper
  •  1 tbsp fresh thyme, finely chopped
  •  1 tbsp butter, unsalted
  •  1 tbsp olive oil

 Condiments:

Preparation

Melt the butter in a large, deep pan over medium heat. When the butter foams up, add the sliced red onions and simmer until they are tender and transparent. Chop the strawberries and combine the sugar with the vinegar and red wine. Add the chopped strawberries and the sugar-vinegar mixture to the red onions. Turn up the heat and continue to cook until the liquid has reduced and evaporated.

 Add salt, pepper and fresh thyme to the ground meat and mix well. Shape into sliders (approx. 120g each). Melt the butter and oil in a pan over medium heat and fry the sliders for 2 min. on each side.

Spread the homemade aioli on a slider or burger bun and top with fresh arugula which gives the burger a peppery flavour.

Top with Burger Blue, either cold or melted! Creamy and delicious :)

Serve with crisps or a fresh summer salad.
