This mouthwatering cheesecake is the perfect dinner party dessert and also ideal for any special occasion. It has a crunchy digestive biscuit and almond crust and a silky cream cheese filling with sweet and refreshing pineapple flavors.
For the cream cheese filling we used Castello Cream Cheese with pineapple – it’s made with small chucks of pineapple with chopped almonds and papaya. It has a sweet pineapple aroma with notes of butter, marzipan and warm syrup.
To make it even more irresistible add shavings of chocolate on top and coconut on the side.
This pineapple cheesecake can be made full size or in mini cheesecakes for individual treats.
