Baked Eggs in Avocado

  • 3 ripe avocados
  • 6 eggs
  • Salt and pepper
  • Fresh chives or parsley  
Baked Eggs in Avocado

Preparation

Preheat the oven to 425°F. Cut the avocado in half lengthwise and take out the pit. Scoop out a bit of the avocado with a spoon to make enough room for the egg. Place the halved avocados in a baking dish. If the avocado shell is too round, cut a small slice off the base to keep the avocado flat while baking. Crack an egg into a bowl and gently place in the pit hole of the avocado. Bake in oven for approx. 15 minutes. Season with salt and pepper and freshly chopped chives or parsley.
