Cheese & Wine Pairings: Castello & Folie à Deux

FOLIE À DEUX

ALEXANDER VALLEY CABERNET SAUVIGNON

AND

CASTELLO® AGED HAVARTI

A plush and delightfully well-balanced wine, Folie à Deux Alexander Valley Cabernet Sauvignon embraces the essence of its terroir and the winemaker’s harmonious style. Boasting the aromas of black cherry and black currant followed by subtle hints of fennel and tobacco, it is an elegant and supple wine meant to be savored.

The rich, buttery aroma and creamy, slightly crunchy texture of Castello® Aged Havarti provides the perfect pairing for this wine. With its attractive deep notes of butter and fermented milk, the combination is a delight for the senses. The small white spots that are visible on and within the cheese are the secret to its delicate and crystalline texture and subtle crunch.

Serve with foods such as caramelized onion chutney, asparagus, or a seasoned grilled burger with juicy Portobello mushrooms.

FOLIE À DEUX

DRY CREEK VALLEY

ZINFANDEL

AND

CASTELLO® TRADITIONAL DANISH BLUE

Folie à Deux Dry Creek Valley Zinfandel combines the aromas of blackberry jam with hints of mild black pepper followed by flavors of black cherry, boysenberry, and blackberry pie interlaced with mocha, toffee, and vanilla complemented by a soft, rounded, elegant finish.

For a zesty pairing, choose Castello® Traditional Danish Blue. With a fine, nutty blue aroma and hints of marzipan overlaid on a sourdough flavor, its soft and elegant bitterness brings out the flavor of the wine. This cheese has a protected destination of origin (PDO) for Denmark.

Serve with caramelized red pepper, figs, pears, olives, nuts, blueberries, rye bread, grilled skirt steak or rack of lamb.

FOLIE À DEUX

RUSSIAN RIVER VALLEY CHARDONNAY

AND

CASTELLO® DOUBLE CRÈME WHITE

Opulent and alluring, Folie à Deux Russian River Valley Chardonnay is richly framed by aromas of pear, apricot, and apple laced with warm vanilla followed by a light crispness on the finish

Castello® Double Crème White, a mild, soft cheese with a creamy texture, is the ideal accompaniment to this wine. The taste is complex but clean, with a combination of butter, cream and saltiness. Unlike other soft cheeses, it matures from the inside out to create its velvety texture. Remove from the refrigerator one hour before serving to enjoy the full taste experience.

Make the most of this wine and cheese pairing by serving with apple jam, fresh hazelnuts, grilled asparagus, peaches, poached salmon or pan-seared scallops.
