Fried chicken drumsticks with pasta salad

Fried chicken with a different feel – our recipe for Fried chicken drumsticks with pasta salad combines the deep flavours of the American south with the light and herbal Mediterranean approach. This is a dish full of lovely textures, exciting taste and a beautiful balance between light and heavy.

ingredients

Fried chicken drumsticks

  • 8 rinsed chicken drumsticks
  • 1 egg
  • 5 tbsp breadcrumbs
  • 1 tsp sweet paprika
  • ½ tsp coarse salt
  • freshly ground pepper

Pasta salad

  • 150 g dried pasta
  • 200 g green beans
  • green courgettes
  • 5 finely chopped spring onions
  • 100 g cherry tomatoes
  • 100 g crumbled salad cheese (block)
  • 1 handful flat leaf parsley
  • 2 small, crushed garlic cloves
  • 1 tbsp small, crushed lemon juice
  • 1 tsp coarse salt
  • freshly ground pepper

Garnish

  • flat leaf parsley

Side dish

  • 240 g wholemeal bread

preparation

1. Pat the chicken dry with some kitchen towel.

2. Beat the egg with a fork and separately combine breadcrumbs with the spices.

3. First dip the chicken in egg, then in the spiced breadcrumbs. Place the chicken in a greased, ovenproof baking dish (approx. 15 x 25 cm) and roast in the middle of the oven until completely cooked for approx. 50 min. at 200°C (conventional oven).

4. Cook the pasta in salted water in a large pot. Cook for approx. 8 minutes uncovered, then add the beans and continue to cook uncovered for approx. 3 min. Drain in a colander and leave to steam off.

5. Combine the pasta and beans with the rest of the ingredients. Arrange in a serving bowl and sprinkle with chopped fresh parsley.

6. Serve the pasta salad with chicken and bread.
