1. To assemble the sandwiches, spread the hummus on top of the bottom layer of each bun and top it with ½ tbsp basil pesto and ½ cup baby arugula.
2. Then layer one slice of the heirloom tomato, a few slices of red onion, a few slices of cucumber, and a few carrot strips.
3. Add a layer of sliced avocado, another slice of tomato, and then a generous layer of sliced Castello Creamy Havarti Cheese.
4. Top the cheese with another ½ Tbsp basil pesto and the remaining ½ cup of baby arugula. Crown your sandwich with the top bun and enjoy!
