This carefully crafted cheese has even been named the champion of Danablu on multiple occasions by an independent panel of Danish cheese experts, the most recent being in 2018. Though inspired by the famous Roquefort cheese, Castello® Danish Blue differs from its muse by being made with homogenised cows' milk, developing a pronounced bite. With the sharper notes tempered by the cream in the milk, its fine, nutty blue mould aroma, hints of marzipan, and subtle sourdough-like bitterness makes this variety a perfect choice for cooking and snacking.

    Beautifully crafted by our master cheesemakers, Castello® Danish Blue Cheese amplifies the best qualities of traditional Danish blue mould cheese. During production, the surface of the cheese is carefully treated with a higher salt concentration, helping it remain white even as the blue mould develops during ripening. Finally, before the cheese is sliced and packed, each piece is carefully inspected to ensure every delicious bite meets our high quality standards.

Castello® Danish Blue Cheese is strong, flavourful, and proudly aromatic. It boasts a sharp, nutty blue mould aroma followed by subtle hints of marzipan and sourdough, creating a taste that excellently balances sweet and bitter elements.

As the cheese matures, the mould breaks down fats and proteins in the milk. This natural process releases aromatic compounds that introduce the distinctive, sharp, and earthy scent of blue cheese. When the mould interacts with the milk fat, it produces a nutty, almond-like aroma, and the creamy richness of the milk helps sweeter notes come forward. Finally, the breakdown of proteins adds savoury, lightly bitter flavours similar to those found in fermented foods like sourdough bread, delivering the perfect union of creamy, nutty, and slightly tangy notes.

Delicately smooth with a light, crumbly texture

The texture of this cheese is just as interesting as its flavour. Give it a gentle squeeze and it will crumble easily, yet once it reaches your palate, the cheese becomes smooth and pleasantly creamy. This delicate equilibrium comes from the way the cheese is made.

The richness of the milk is the source of its smoothness, but the crumble comes from its curds. During production, the curds are handled carefully so that they remain relatively loose when placed into the moulds. Because the curds are not pressed tightly together, tiny gaps remain between them, and as the cheese matures, the curds knit together only lightly, giving Danish Blue its signature crumbly texture. The ripening process gradually softens the cheese from within, making it feel smoother and creamier in the mouth while keeping its pleasant crumble.
