As the cheese matures, the mould breaks down fats and proteins in the milk. This natural process releases aromatic compounds that introduce the distinctive, sharp, and earthy scent of blue cheese. When the mould interacts with the milk fat, it produces a nutty, almond-like aroma, and the creamy richness of the milk helps sweeter notes come forward.
