For the Blueberry Vinaigrette
  • ¼ cups balsamic vinegar
  • ½ cup avocados oil
  • 2 tbsp honey
  • ¼ cups fresh blueberries
  • salt and pepper to taste

preparation

1. Make the Vinaigrette - add all ingredients to a food processor or high powered blender and pulse until smooth. Set aside.

2. Slice the avocados and cucumbers.

3. Toss all of the salad ingredients in a large bowl.

4. Serve with dressing.
