Assemble the wraps by first spreading 2-3 Tablespoons of hummus all over the tortilla. Next, lay out the grilled zucchini in an even layer at the center of the tortilla. Add arugula, tomatoes, onions, and a generous sprinkle of Castello Gouda Cheese. Season with salt and pepper to taste. Wrap the tortilla as a burrito, folding in the ends to secure the contents.
Serve chilled, garnished with fresh parsley.
