Edamame hummus

Ingredients

7 oz shelled edamame beans (frozen)
1 tbsp tahini
2 tsp ground ground cumin
1 - 2 garlic cloves
½ cups sour cream or yogurt
olive oil
lemon juice
salt
pepper

Preparation

Preparation

Pour boiling water over the shelled edamame beans and strain.

Add the edamame beans, ground cumin, tahini and garlic to a blender.

Pulse lightly to blend and gradually add the olive oil and yogurt until you get the right texture – season with salt, pepper and lemon juice.
