  • 4 fresh chorizo
  • mixed lettuce (romaine lettuce and red Mizuna)
  • 1 small cauliflower
  • 1 Castello® Traditional danish blue
  • 1¾ ounces caper berries
  • 1⅖ ounces toasted pine nuts
  • fresh fresh basil
  • 1 lemon
  • 3 tbsp olive oil
  • salt
  • pepper

preparation

Preparation

1. Fry the chorizo on a hot pan and cut into slices.

2. Place lettuce on a serving dish.

3. Add sliced chorizo, cauliflower and Castello Traditional Danish Blue.

4. Top with caper berries, pine nuts and basil. Just before serving the salad, season with salt, pepper and a drizzle of lemon juice and olive oil.
