An expiry date indicates the last day a product is safe to consume. A best-before date is different. It indicates the quality of your food, not the safety. After this date, the food may no longer be in perfect shape – it might have lost freshness, taste, or aroma, but that does not necessarily mean it is no longer safe to eat. If you spot a little mould on a block of yellow cheese, do not throw the block out. You can cut away the mould and enjoy the rest. Remove at least 2.5 cm around and below the mould spot and ensure the knife does not touch the mould part, as it could then contaminate other parts of the cheese. Hard cheeses resist mould spreading deep into the product, which is why cutting around the affected area is safe.
