Grilled salmon with crispy salad

Fresh, healthy and fast - our recipe for Grilled salmon with crispy salad just goes to show that cooking a healthy and delicious meal doesn’t have to exhaust you. Crunchy textures and exciting flavours from kohlrabi, cauliflower and radishes, salty cheese cream and lovely grilled salmon - made in just 30 minutes.

ingredients

Dressing

  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp virgin olive oil
  • 1 tbsp water
  • 2 tsp runny honey
  • ¾ tsp coarse salt
  • freshly ground pepper

Crisp salad

  • 200 g peeled kohlrabi
  • 200 g cauliflowers
  • 200 g radishes

Cheese cream

  • 200 g salad cheese (block)
  • 1 dl skyr
  • 1 tsp lemon zest
  • freshly ground pepper
  • 4 salmon fillet with skins
  • ½ tsp coarse salt
  • freshly ground pepper
  • 1 kg baby potatoes

Garnish

  • chives

preparation

1. Combine all the ingredients for the dressing.

2. Finely slice the kohlrabi, cauliflower and radishes, using a mandolin slicer if possible. Combine the vegetables in a bowl and toss with the dressing. Garnish with finely chopped chives. Cover the salad and refrigerate until serving.

3. Place the cheese, Skyr, lemon zest and pepper in a mini-chopper and chop until combined.

4. Heat up a grill pan nice and hot. Season the salmon fillets with salt and pepper and grill them skin side down for approx. 6 min. – depending on thickness. Turn them over and grill on the other side for approx. 2 min.

5. Serve with potatoes, crispy salad and the cheese cream.
