
Bacon Blue Guacamole

Ingredients
- 2 ripe avocados
- 1 lime fruit, juiced
- 1 garlic clove, peeled and minced
- freshly ground black pepper to taste
- (60 mL) fresh fresh coriander, washed and finely chopped
- 1 fresh roma tomato, diced
- hot sauce to taste (optional)
- 1/4 cup (60 mL) Castello® Extra creamy danish blue broken into bite-sized pieces
- 5 slices bacon, cooked until crisp and broken into bite-sized pieces
Preparation
Preparation1. Cut open avocados, remove pit and scoop inside into a large bowl.
2. Add lime juice, garlic, salt and pepper and mash gently.
3. Add cilantro, tomato and hot sauce to taste; stir carefully to combine.
4. Top with Castello® Extra Creamy Danish Blue crumbles and bacon pieces.
